The Science of Bread Fermentation
Bread is yeast plus flour plus water plus salt, fermented and baked. The yeast (Saccharomyces cerevisiae) metabolizes the flour's sugars into carbon dioxide and ethanol. Divide and gently shape into rounds, then rest 15–20 minutes (bench rest). Final shape into batards, boules, or loaf-pan logs. Build tension on the surface — this is what gives the loaf its rise during the oven spring.
Final Proof (45 min–90 min, or 8–14 hr cold retard)
The shaped loaf rises again. Test with the "poke test": gently press with a floured finger; the indentation should slowly spring back about halfway. Cold-retarded sourdough goes into the refrigerator immediately after shaping and ferments slowly for 8 to 14 hours, developing flavor complexity.
Score and Bake
Slash the top with a sharp blade (a lame) to control where the loaf expands. Bake on a preheated stone or in a Dutch oven (the steam trapped inside is essential for crust). The oven spring — the rapid expansion in the first 8 to 10 minutes — happens when the heat boosts yeast activity one last time before the temperature kills it. Bake until the internal temperature reaches 195°F (soft loaves) or 205°F (crusty hearth breads).
Cool (60–90 min)
Resist slicing immediately. The interior is still gelatinizing as it cools. Cutting too early produces gummy, doughy crumb. Cool on a wire rack until the loaf is no longer warm to the touch — at least 60 minutes for a 1 lb loaf, longer for larger.
Common Bread Baking Mistakes
Under-Proofing
The loaf goes into the oven before the yeast has fully done its work. The result is dense crumb, weak rise, and a tight, gummy interior. Test by the poke test — the indentation should spring back slowly, not snap back.
Over-Proofing
The opposite problem. The gluten network has been pushed past its capacity, and the dough collapses when scored or in the oven. Test by the poke test — an over-proofed dough does not spring back at all.
Wrong Hydration
Modern artisan breads are 70–80% hydration (water weight as % of flour weight). High-hydration doughs are sticky but produce open crumb. Low-hydration doughs are easier to handle but produce dense bread. Weigh your flour and water with a kitchen scale; volume measurements are not accurate enough.
Slicing Hot Bread
The crumb is still setting as the loaf cools. Cutting into a hot loaf produces gummy slices and releases all the trapped steam at once, accelerating staling.
Skipping the Steam
Steam in the first 10 minutes of baking is what gives crusty bread its shiny, blistered crust. A home oven cannot easily generate the steam a commercial oven has, which is why a preheated covered Dutch oven works so well — it traps the bread's own steam.

Yeasted bread is shelf-stable at room temperature for 3 to 5 days in a paper bag (which lets moisture escape and keeps the crust crisp) or 5 to 7 days in plastic (which softens the crust).
